Whipped cream made from fresh cream is lovely, but it is fussy. It can tip from soft to grainy in seconds, and it starts to weep within hours. For layer cakes, piped decorations and anything that needs to sit in a display fridge, pastry kitchens often turn to a whipping cream powder.

Vizyon Stella Whipping Cream 1kg from Polen Food Oceania is a vegetable-based powder with a light, sweet vanilla flavour. Whipped with cold milk or water, it gives a fluffy, clean white cream that spreads easily and is made not to crack or water out.

The method is simple, but two details matter. The first is the ratio: one part powder to two parts liquid by weight. The second is the liquid’s temperature. The manufacturer specifies 10–15°C, which is a little warmer than milk straight from the fridge. Get those right, whip for three to four minutes, and give the cream a short rest in the fridge. You will have a cream ready to fill, cover and pipe.

The recipe

Whipped Cream with Vizyon Stella Whipping Cream Powder

Makes About 450 g whipped cream (enough to fill and cover a 20 cm sponge)

Method

  1. Bring the milk to 10–15°C. Milk straight from the fridge is usually around 4°C, so leave it on the bench for 15–20 minutes and check it with a thermometer. The emulsifiers in the powder are designed to work in this range. If the milk is too warm, the fat softens and the cream won't hold its shape. If it is much colder, the cream can whip unevenly.

  2. Weigh the powder into a large, deep, clean and dry mixing bowl. Pour the measured milk over the top.

  3. Mix on low speed for about 30 seconds, until the powder is fully moistened and there are no dry pockets. Starting slowly stops a cloud of powder rising out of the bowl.

  4. Increase to high speed and whip for 3–4 minutes. The mixture will thicken, turn bright white and increase considerably in volume. Stop when the cream holds firm, glossy peaks on the whisk.

  5. Cover the bowl and refrigerate for 15 minutes before using. This short rest lets the cream set up and firm slightly, so it spreads more smoothly and pipes with sharper edges.

  6. Give the cream a few gentle folds with a spatula, then use it straight away to fill and cover cakes, pipe decorations or top desserts. Keep finished cakes in the fridge.

Equipment

  • Digital scales
  • Stand mixer with whisk attachment, or hand-held electric beaters
  • Large, deep mixing bowl
  • Probe thermometer
  • Rubber spatula
  • Piping bag and nozzle (optional)

Chef’s tips

  • Keep to the ratio of one part powder to two parts liquid by weight whenever you scale the recipe. For example, 100 g powder with 200 g milk, or 200 g powder with 400 g milk.
  • Optionally adjust the ratio of powder to water or milk. For example, 1:1 ratio will result in a firmer cream.
  • Milk gives a fuller, creamier flavour. Water gives a slightly lighter cream with the cleanest white colour, which is useful when you plan to tint it.
  • Use a deep bowl. The mixture expands a great deal as it whips, and a shallow bowl will send cream up the sides and over the edge.
  • Make sure the bowl and whisk are completely clean and dry. Any trace of grease can stop the cream reaching full volume.
  • Stop whipping as soon as the cream holds firm, glossy peaks. Overwhipped cream turns dull and stiff and is harder to spread smoothly.
  • If the cream firms up too much after chilling, fold it gently with a spatula for a few seconds before spreading or piping.

Storage

Use the whipped cream on the day it is made for the best texture. Leftover cream keeps in an airtight container in the fridge for up to 2 days; fold it briefly with a spatula before using. Keep cakes finished with the cream refrigerated. Store the unopened powder sealed in a cool (below 25°C), dry place.
